Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 1 14.5 oz can diced tomatoes
  • 1/2 cup kalamata olives pitted and halved
  • 1/2 cup roasted red peppers sliced
  • 1/4 cup sun-dried tomatoes chopped
  • 1/3 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp crushed red pepper flakes optional
  • 3 cloves garlic minced
  • Salt and pepper to taste
  • 2 tbsp fresh parsley chopped (for garnish)

Method
 

  1. Begin by preparing the chicken. Pat the thighs dry with paper towels and season both sides generously with salt and pepper.
  2. In a skillet over medium heat, add the olive oil. Once hot, sear the chicken thighs for about 3-4 minutes per side until golden brown. This step enhances the flavor but can be skipped if you're short on time.
  3. Once seared, transfer the chicken to the slow cooker. Pour in the diced tomatoes, chicken broth, and tomato paste, mixing gently to combine.
  4. Add the kalamata olives, roasted red peppers, sun-dried tomatoes, minced garlic, dried oregano, dried basil, and crushed red pepper flakes if using. Stir until everything is well incorporated.
  5. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and easily shredded with a fork.
  6. Once cooked, taste and adjust seasoning if necessary. You can add more salt, pepper, or herbs depending on your preference.
  7. Before serving, garnish with fresh parsley for a pop of color and flavor. This dish pairs beautifully with couscous, rice, or crusty bread.
