Savory Sweet Potato & Cranberry Gratin Delight

Sweet Potato & Cranberry Gratin made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 4 large sweet potatoes peeled and sliced
  • 2 cups fresh cranberries
  • 1 cup heavy cream
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9x13 inch baking dish with butter.
  3. Arrange half of the sliced sweet potatoes in a single layer at the bottom of the dish.
  4. Sprinkle half of the cranberries over the sweet potatoes.
  5. Season with salt, pepper, and half of the fresh thyme.
  6. Pour half of the heavy cream evenly over the first layer.
  7. Repeat the layers with the remaining sweet potatoes, cranberries, thyme, and finish with the remaining cream.
  8. Top with shredded Gruyère cheese and dot with butter.
  9. Cover with aluminum foil and bake for 45 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
  11. Let the gratin cool for 10 minutes before serving.
