Ingredients
  

  • 2 lbs beef roast like sirloin or round
  • 2 medium carrots chopped
  • 1 medium onion chopped
  • 1 parsnip chopped
  • 1 celery stalk chopped
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar white or apple cider
  • Salt and pepper to taste

Method
 

  1. Prepare the beef roast
  2. Brown the roast on all sides
