- Preheat the oven to 400°F (200°C).
- Toss the cubed sweet potatoes with olive oil, salt, and black pepper.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast for about 25-30 minutes, or until tender and golden brown.
- Remove the sweet potatoes from the oven and let cool slightly.
- Add the crumbled goat cheese and chopped sage to the sweet potatoes, gently folding them in.
- Serve warm, garnished with additional sage if desired.
