Zesty Lemon-Sumac Chicken with Herb Infusion

Lemon-Sumac Roasted Chicken made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 whole chicken about 4-5 lbs
  • 2 lemons zested and juiced
  • 2 tablespoons sumac
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 teaspoons smoked paprika
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the chicken by removing any giblets and patting it dry.
  3. In a bowl, mix lemon juice, zest, minced garlic, olive oil, salt, pepper, smoked paprika, parsley, and mint.
  4. Rub the mixture all over the chicken, including under the skin and inside the cavity.
  5. Place the chicken on a roasting pan, breast-side up, and tuck the wing tips underneath.
  6. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Baste the chicken with its own juices halfway through cooking for added flavor.
  8. Remove from the oven and let rest for at least 10-15 minutes before carving.
  9. Serve with fresh herbs on top for garnish and additional lemon wedges on the side.
